This most attractive fall-blooming perennial is spectacular in large patches. It grows from an underground tuber like a small potato; our hand-selected cultivar has a sweet, carrot-like flavor and towers to nearly 20' tall in the right conditions.

Disclaimer: This food is known for inducing flatulence. To reduce this effect, roast the tubers as much as possible (I usually do 60-90 minutes at 400F) to convert the inulin into digestible sugars. Also, the herb epazote can help reduce the effect.
